Ingredients

Rice Pilaf

  • 2 TBSP Onion minced
  • 1 clove Garlic minced
  • 1/2 cup White rice rinsed
  • 1 TBSP Extra-virgin olive oil
  • 1 cup Chicken broth
  • Salt to taste
  • Black pepper to taste

Marinade

  • 1/2 tsp Garlic powder to taste
  • 1/2 tsp Dried oregano to taste
  • 3 tsp Lemon juice to taste
  • 6 TBSP Extra-virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste

Chicken

  • 12 Chicken wings
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 2 hunks Greek bread nice big hunk

Tossed Salad

  • 2 cups Romaine lettuce chopped
  • 8 Grape tomatoes halved
  • 1/2 cup Cucumber sliced into half circles
  • 2 TBSP Carrots shredded

Dressing

  • 3 tsp Extra-virgin olive oil
  • 1 cloves Garlic grated
  • 1/4 tsp Dijon mustard
  • 1 tsp Red wine vinegar

Sparkling Water

  • 16 oz Sparkling water

Instructions

  • Make rice pilaf: Set a pot over medium heat. Prep onion, garlic, and rice per instruction above. Add the oil to the pot and saute the onion and garlic until the onions start to soften. Stir in the rice. Stir in the broth. Cook according to the directions on the package.
  • Make marinade: In a bowl whisk together the ingredients for the marinade. Season with salt and pepper to taste.
  • Heat a grill or griddle pan over medium heat.
  • Prep the wings: Set some of the marinade aside for brushing the bread. Toss the wings with the marinade and season with salt and pepper.
  • Prep the bread: Brush the bread with the marinade on one side.
  • Grill the wings on all sides, basting with the marinade throughout cooking. Cook to an internal temperature of 160°F (70°C) using a thermometer. While the wings are cooking, prep the salad and make dressing.
  • Prep salad: Prep salad ingredients per instruction above.
  • Make dressing: In a bowl whisk together all the ingredients for the dressing until fully combined.
  • Grill the bread: Lightly grill the bread brushed side down until golden brown.
  • Finish Rice Pilaf: Once the rice is tender and the liquid has been absorbed, remove from the heat and let stand covered with a lid for 5 minutes. Then fluff with a fork. Season with salt and pepper to taste.
  • Finish salad: Toss all ingredients together with the dressing before serving.
  • Serve the wings with grilled bread, salad, and sparkling water.
