Ingredients

Chicken

  • 3 tsp Extra-virgin olive oil
  • 1/2 tsp Garlic powder
  • 8 oz Chicken breast boneless skinless

Seasoning

  • Salt
  • Black pepper

Caesar Salad:

  • 1 clove Garlic minced
  • 1 tsp Dijon mustard
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp Lemon juice fresh squeezed
  • 1/2 tsp Red wine vinegar
  • 1 TBSP Extra-virgin olive oil
  • 1/2 TBSP Parmesan cheese grated
  • 2 cups Romaine lettuce chopped

Garlic Bread

  • 2 slices Crusty bread
  • 2 tsp Butter
  • 2 cloves Garlic minced

Lemon Spritzer

  • 22 oz Sparkling water cold
  • 2 oz Lemon juice
  • 2 tsp Sugar

Instructions

  • Prep the ingredients per the instructions above.
  • In a bowl, mix the oil, garlic powder, and season with salt and pepper. Coat the chicken in the mixture. Set aside.
  • Heat a grill or grill pan over medium heat. Grill the chicken on both sides to an internal temperature of 160°F (71°C) using a thermometer. Then remove from the heat and set aside to rest for 3 minutes. Then chop.
  • Make the Caesar dressing: In a small bowl, whisk together garlic, dijon, Worcestershire, lemon juice, and red wine vinegar. Slowly drizzle in extra virgin olive oil while whisking constantly. Whisk in parmesan. Season with salt and black pepper to taste.
  • Toast the bread in the oven broiler on low or in a toaster oven. Then spread with butter, garlic. Broil until golden brown.
  • Mix the romaine with dressing and chicken.
  • Mix the ingredients for the spritzer. Add sugar to taste for sweetness.
  • Serve the salad with garlic bread and spritzer.
