Ingredients
Green Goddess Crunch Sandwich
- 1/4 cup Fresh chives finely chopped
- 1/4 cup Mayonnaise
- 1/4 cup Fresh tarragon
- 1/4 cup Greek yogurt
- 1/2 Lemon
- 2 TBSP Extra-virgin olive oil plus more for drizzling
- Salt to taste
- Black pepper to taste
- 1/2 head Butter lettuce large leaves torn
- 1/4 Cucumber thinly sliced
- 4 slices Sourdough bread
- 4 oz Fresh mozzarella sliced ¼ inch thick
- 2 cups Alfalfa sprouts
- 1 Avocado thinly sliced
- 2 oz Sour cream cheddar potato chips
- 2 Pickle spears
Pineapple Juice Spritzer
- 12 oz Pineapple juice
- 12 oz Sparkling water
- Ice cubes
Instructions
- Prep sandwich ingredients per the instructions above.
- Make green goddess dressing: Place chives, mayonnaise, tarragon, and yogurt in a blender along with zest and juice of the lemon, oil, salt, and pepper to taste. Purée until smooth.
- Squeeze juice from the remaining lemon half over lettuce and cucumbers in a medium bowl. Drizzle with oil; season with salt and pepper. Toss to coat.
- Spread the dressing on one side of each slice of bread.
- Layer the bottom slice of bread with lettuce, cucumbers, mozzarella, sprouts, and avocado. Season with salt and pepper.
- Mix together the pineapple juice and sparkling water. Serve over ice if desired.
- Serve: Cut the sandwich in half. Enjoy with chips, pickle, and pineapple juice spritzer.
