Ingredients

  • 4 Ciabatta rolls lightly toasted
  • 12 oz Deli roast beef sliced thin or shaved (substitute filet mignon to kick the meal up a notch)
  • 1.5 tbsp Steak seasoning montreal steak seasoning or comparable brand
  • 2 tsp Extra-virgin olive oil
  • 1 cup Onion sliced thin
  • 2 cups Beef broth
  • 8 slices Provolone cheese
  • 2 oz Potato chips
  • 2 Pickles halved

Instructions

  • Preheat the oven broiler on low. Slice open the rolls and place on a baking sheet. Toast the bread under the broiler until golden brown (keep a close eye on the bread so that it doesnt burn).
  • Season the beef with steak seasoning and salt.
  • Heat a saucepan on medium heat. Once hot, add the oil and onions. Saute until the onions soften and start to brown. Then stir in the broth and beef. Bring to a low simmer until the flavor concentrates, about 15 minutes. Taste and adjust the seasoning as needed or continue simmering to develop a bolder flavor.
  • Using tongs or a slotted spoon place the beef on the bottom half of the bread and place the cheese on top. Place underneath the broiler until the cheese has melted fully. Then place the top of the bread on and cut in half.
  • Serve the sandwiches with small bowls of broth for dipping as well as chips and pickles.
