Ingredients
- 1/2 tbsp Red onion chopped fine
- 1/2 tbsp Jalapeño pepper chopped small
- 2 tbsp Grape tomatoes quartered
- 1/2 tbsp Scallions chopped
- 2 slices Naan bread
- 2 tbsp Extra-virgin olive oil plus more for drizzling
- 3 oz Andouille sausage chopped
- 4 Eggs beaten
- 1/4 cup Cheddar cheese shredded
- 1/2 cup Blackberries (Check the Fruit guide to substitute seasonal fruits)
Instructions
- In a bowl mix the onion, jalapeno, tomato, and scallion. Drizzle with a small amount of oil and season with salt and pepper. Set aside.
- Warm the naan under the oven broiler on low or in a nonstick pan on medium heat.
- Heat a non-stick pan over medium heat. Once hot, add the oil. Brown the sausage well all over. Add the eggs and cheese into the pan. Move the eggs using quick circular motions with a spatula until creamy, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper.
- Serve the eggs on the flatbread, top with tomato jalapeno mixture, serve with blackberries.
