Fire Braised Chicken

Ingredients

  • 1/2 lb Chicken breast boneless skinless
  • 4 oz Egg noodles
  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion diced
  • 4 cloves Garlic minced
  • 1 cans Fire roasted tomatoes diced 14.5 ounce can
  • 1/2 cup Chicken broth more if needed
  • 1 tbsp Tomato paste
  • 2 cups Broccoli cut into bite sized florets
  • 2 tbsp Fresh basil minced fine right before using
  • 1/4 cup Feta cheese plus a finely crumbled dusting for garnish
  • 2 slices Crusty bread toasted
  • 2 tbsp Fresh parsley garnish

Instructions

  • Season the chicken well with salt and pepper.
  • In a pot of salted boiling water cook the noodles according to the directions on the package. Once tender, drain well and set aside.
  • Heat a pot on medium heat. Once hot, add the oil, then saute the onion and garlic until soft. Add in the fire roasted tomatoes, broth, and chicken. Season with salt and pepper. Cover with a lid and simmer until the chicken reaches an internal temperature of 155 degrees using a thermometer. Then remove the chicken and stir in the tomato paste and broccoli. Turn down to a low simmer.
  • Using two forks pulling in opposite directions shred the chicken apart. Then return it to the pot. Cover with a lid and continue to low simmer so the chicken can absorb flavor and the broccoli becomes tender. Season with salt to taste. Remove from the heat and stir in the basil, feta, and pasta.
  • Serve with bread. Garnish with parsley and a dusting of finely crumbled feta.
