- 4 Eggs
- Salt to taste
- Black pepper to taste
Arugula Salad
- 2 cups Arugula
- 1 tsp Extra-virgin olive oil
- ½ tsp Lemon juice
- Salt to taste
- Black pepper to taste
Toast
- 2 slices Your choice of bread
- 2 TBSP Butter for spreading
Coffee
- Coffee
- Your choice of creamer
- Your choice of sweetener
Grapefruit
- 1 large Grapefruit halved
- ½ tsp Sugar for added sweetness optional
Cantaloupe
- 4 slices Cantaloupe rind on
Instructions
- Heat a non-stick skillet over medium heat and add the butter.
- Crack the eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
- In a mixing bowl, toss arugula with olive oil, lemon juice, salt, and pepper until evenly coated.
- Toast the bread slices until golden brown. Then spread with butter.
- Brew and prepare the coffee to your liking.
- Serve the eggs with arugula salad, buttered toast, grapefruit sprinkled with sugar optional, cantaloupe, and coffee.
