Eggs, Sausage, and Home Fries

Ingredients

Home fries

  • 2 Potatoes medium, peeled and diced
  • 2 TBSP Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste

Toast with jam

  • 2 slices Your choice of bread
  • 2 TBSP Butter
  • 2 TBSP Your choice of jam or preserves

Sausage

  • 4 Breakfast sausage links

Eggs

  • Butter or cooking oil
  • 4 Eggs
  • Salt to taste
  • Black pepper to taste

Orange juice

  • 16 oz Orange juice

Instructions

  • Preheat the oven to 400°F (200°C).
  • While the oven is preheating, wash, peel, and dice the potatoes.
  • Place the diced potatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  • Spread the potatoes out in a single layer on the baking sheet. Roast in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  • Cook the sausage in the oven on a baking sheet according to the instructions on the package.
  • Toast the bread slices until golden brown.
  • Spread butter on the toasted bread slices and top with jam.
  • Add butter or cooking oil to a skillet over medium heat. Crack the eggs into the hot skillet and cook the eggs as desired (i.e. scrambled, fried, sunny side up). Season with salt and pepper.
  • Serve the eggs with home fries, sausage links, and toast with jam. Enjoy with orange juice.
