Ingredients

  • 3 tbsp Black beans
  • 2 tbsp Corn
  • 2 tbsp Whipped cream cheese
  • 2 tbsp Cheddar cheese shredded
  • 2 tbsp Scallions chopped
  • 12 Wonton wrappers substitute store bought potstickers or dumplings if desired

Sauce

  • 4 tbsp Mayonnaise
  • 1 tsp Sriracha sauce

Instructions

  • Preheat the oven to 400°F.
  • In a bowl mix the beans, corn, cream cheese, cheddar, scallions, and season with salt and pepper.
  • Place the wonton wrappers on a cutting board. Lightly dampen the edges with water. Place 1 teaspoon of filling in the center of the wrapper. Fold the corners to the center and press them together to seal. Then set aside to dry for 2 to 3 minutes.
  • Place on a parchment paper-lined baking sheet lightly greased with cooking spray; lightly coat the tops of the wontons with additional cooking spray.
  • Bake golden brown and crispy, about 8 - 12 minutes.
  • In a bowl whisk together the mayo and sriracha. Season with salt to taste.
  • Serve the wontons with sauce.
