Ingredients

Muffins

  • Nonstick spray
  • 1/3 cup All-purpose flour
  • 1/3 cup Cornmeal
  • 2 TBSP Granulated sugar more or less depending on how sweet you like your muffins
  • 1/3 TBSP Baking powder
  • 1/8 tsp Salt
  • 1 Egg beaten
  • 1/3 cup Milk
  • 1 TBSP Butter melted
  • 1/2 TBSP Vegetable oil
  • Butter for spreading (optional)

Milk

  • 16 oz Milk cold

Instructions

  • Preheat oven to 400 °F (200 °C).
  • Prepare a muffin pan by greasing it with nonstick spray.
  • Mix dry ingredients in a large bowl and form a well in the middle of the mixture.
  • Mix egg, milk, melted butter, and oil in a large mixing bowl. Pour into the well of dry ingredients; mix well.
  • Divide the batter into the wells, filling them 3/4 of the way.
  • Bake for 12-15 minutes, or until light golden brown and a toothpick inserted into the center comes out clean.
  • Let cool for 5 minutes.
  • Serve whole or cut in half and spread with butter if desired. Enjoy with milk.
