Ingredients

  • 1/2 cup Peanut butter or substitute almond butter
  • 1/4 cup Coconut oil
  • 1/4 cup Maple syrup
  • 1/4 cup Milk
  • 1/2 tsp Vanilla extract
  • 2 cups Rolled oats
  • 4 tbsp Cacao powder
  • 4 tbsp Dark chocolate chips

Instructions

  • On the stovetop fill a saucepan with water and bring it to a low simmer.
  • Add the peanut butter, coconut oil and maple syrup to a heat safe bowl.
  • Place the bowl over the simmering water. Whisk continuously until everything is melted.
  • Take off the heat and mix in the milk, vanilla and a pinch of salt, and then fold in the oats and cocoa.
  • Place the dark chocolate chips into a heat safe bowl and place over the simmering water, stirring until the chocolate has melted. Then remove from the heat.
  • Using an ice cream scoop or a tablespoon, scoop out the mixture and drop on a baking sheet lined with baking paper. Shape into round cookies, drizzle with chocolate over top, and refrigerate until set.
