Ingredients
- 1 tbsp Extra-virgin olive oil
- 2 tbsp Red onion diced, save some for garnish if desired
- 1/4 cup Green bell pepper seeded and diced
- 2 cloves Garlic minced
- 1/2 pound Ground beef
- 1/4 tbsp Chili powder use more or less depending on spice preference
- 1/2 tbsp Ground cumin
- 1 tbsp Paprika
- 1/2 cup Crushed tomatoes
- 2 cups Chicken broth
- 1/4 cup Monterey jack cheese shredded
- 1 tbsp Fresh cilantro garnish
- 2 tsp Sour cream
- 1 oz Tortilla chips
- Jalapeño pepper sliced, optional
Instructions
- Heat a pot over medium heat. Once hot, add the oil. Saute the onion, peppers, and garlic until softened. Crumble in the ground beef and brown while breaking it up into smaller pieces. Once partially browned, add in the chili powder, cumin, and paprika (add chili powder a little at a time throughout the cooking process for a milder spice; taste before you add more).
- Stir in crushed tomato, chicken broth, and season with salt and pepper. Bring to a simmer to build flavor, about 20 minutes. Taste and adjust the seasoning with salt and pepper or additional spices if needed.
- Portion the chili and top with cheese, tortilla chips, cilantro and sour cream. Garnish with jalapeno (if using).
