- 9 oz Chicken sausage links diced
- 8 Eggs
- 4 oz Swiss cheese
- 8 slices Multigrain bread toasted
- 1 tbsp Extra-virgin olive oil
- 2 Pears sliced
Instructions
- Add the oil to a nonstick pan over medium-high heat and cook the chicken sausage for 2 - 3 minutes, or until golden brown and crisp.
- Scramble eggs and pour into the skillet, season with salt and pepper. Cook until top is nearly set but still glossy, then add sliced cheese and melt and fold over eggs.
- Toast the bread and assemble the sandwich.
