Ingredients
Chicken
- 3 tsp Extra-virgin olive oil
- 8 oz Chicken breast boneless skinless
Seasoning
- Salt
- Black pepper
Caesar:
- 1 clove Garlic minced
- 1 tsp Dijon mustard
- 1/2 tsp Worcestershire sauce
- 1/2 tsp Lemon juice fresh squeezed
- 1/2 tsp Red wine vinegar
- 1 TBSP Extra-virgin olive oil
- 1/2 TBSP Parmesan cheese grated
- 2 large Tortilla wraps
- 2 cups Romaine lettuce chopped
- 2 oz BBQ potato chips
Applesauce
- 2 cups Applesauce
Lemon Spritzer
- 24 oz Sparkling water cold
- 1 Lemon sliced
Instructions
- Prep the ingredients per the instructions above.
- Season the chicken with oil, salt, and pepper. Set aside.
- Heat a grill or grill pan over medium heat. Grill the chicken on both sides to an internal temperature of 160°F (71°C) using a thermometer. Then remove from the heat and set aside to rest for 3 minutes. Then chop.
- Make the Caesar dressing: In a small bowl, whisk together garlic, dijon, Worcestershire, lemon juice, and red wine vinegar. Slowly drizzle in extra virgin olive oil while whisking constantly. Whisk in parmesan. Season with salt and black pepper to taste.
- Toss the dressing with lettuce and chicken.
- Place onto a wrap. Fold in the ends and roll up tight. Cut in half.
- Mix the ingredients for the spritzer.
- Serve the wrap with chips, apple sauce, and spritzer.
