Ingredients

French Fries

  • 2 medium Potatoes about 1/2 lb of potato per portion
  • 4 cups Canola oil or your preferred neutral oil with a high smoke point

Cheeseburger

  • 8 oz Ground beef
  • 1/2 TBSP Steak seasoning
  • 1/2 TBSP Worcestershire sauce
  • 2 Hamburger buns lightly toasted
  • 2 slices Cheddar cheese (or your choice of cheese)
  • 4 leaves Butter lettuce
  • 4 slices Tomato
  • 2 slices Red onion sliced thin
  • 4 TBSP Ketchup
  • 2 Pickle spears

Milkshake

  • 2 cups Vanilla ice cream
  • 2/3 cup Milk

Instructions

  • Heat the oven to 350°F (176°C).
  • Place a glass or mug in the freezer.
  • Prep the ingredients per the instructions above.
  • Prep the potatoes: Cut the potatoes into 1/4-inch thick sticks. Place into a large bowl and cover completely with cold water for 20 minutes (see note). Drain well and pat dry with a towel. While the potatoes are soaking, make the burger patties.
  • Mix together the ground beef, steak seasoning, and Worcestershire sauce. Form into even patties. Transfer to a plate, cover with plastic wrap, and reserve in the fridge until you are ready to cook (see note).
  • Blanch the fries:
If using the oven: Place the fries on a parchment-lined baking sheet. Cook in the oven until tender, about 15 to 20 minutes.
If using oil: heat the oil to 300°F (150°C) in a dutch oven or deep fryer. Fry fries in small batches until softened, about 6 to 10 minutes.
  • Then set aside to cool. Heat the oil to 375°F (191°C).
  • Lightly toast the buns in a toaster oven.
  • Heat a skillet over medium-high heat.
  • Cook the burger patties: add the patties to the heated skillet and cook on both sides, getting a nice crusty char to the desired doneness (see note) using a thermometer. When the burger is 3/4 of the way cooked to your liking, add the cheese and cover it with a lid to melt.
  • Cook the potatoes: Fry them in the oil and cook until crispy and golden brown (cook in batches as needed; overcrowding will result in limp fries). Remove to a paper towel-lined large bowl and season with salt immediately to taste.
  • Compose the burger: Place the patty on the bun with lettuce, tomato, and onion.
  • Make the milkshake: Scoop the ice cream into a blender and add the milk. Blend until smooth. Add more milk if needed to thin out the consistency. Serve in a frosted glass or mug.
  • Serve: Enjoy the cheeseburger with french fries, ketchup, pickle, and milkshake.

Internal Temperatures:
  • Rare: 115 - 120°F (46 - 48°C)
  • Medium Rare: 125 - 130°F (51 - 54°C)
  • Medium: 135 - 140°F (57 - 60°C)
  • Medium Well: 145 - 150°F (62 - 65°C)
  • Well Done: 160°F (71°C)
Pro tip: Soaking the potatoes in water before frying draws out the starch so that it doesn’t burn on the surface, resulting in crispier golden-brown fries.
Pro tip: Cooking burger patties chilled instead of at room temperature prevents the patties from falling apart as they cook.
