Ingredients

cupcakes

  • 1/2 cup All-purpose flour
  • 1/3 cup Brown sugar
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Baking soda
  • 1/4 tsp Baking powder
  • pinch Salt
  • 3/4 cup Carrots shredded
  • 1 Egg

frosting

  • 2 tbsp Cream cheese whipped cream cheese will be easier to utilize
  • 1/2 tsp Milk
  • 1/2 cup Powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • Combine the flour, sugar, cinnamon, baking soda, baking powder, and salt in a large bowl. In a separate bowl, combine the grated carrots. Slowly add the flour mixture, stirring until just mixed. Add the egg and stir just until combined, don't over mix.
  • Grease a muffin tin or small oven safe vessel with nonstick spray. Scoop the batter in making sure its in an even layer.
  • Bake until a toothpick inserted into the center comes out clean, about 15 minutes. (cooking time will vary based on the vessel you're using based on how deep or shallow the batter sits in the vessel). Once cooked let sit to cool for 10 - 15 minutes.
  • For the frosting, whisk everything together until smooth.
  • Portion and spread frosting over top before serving.
