Canadian Bacon, Egg, and Cheese Muffin

Ingredients

English Muffin with Canadian Bacon, Egg, and Cheese:

  • 4 slices Canadian bacon
  • 2 English muffins split and toasted
  • 1 TBSP Butter
  • 4 Eggs
  • 2 slices Your choice of cheese
  • Salt to taste
  • Black pepper to taste

Fruit:

  • 2 cups Your choice of fruit such as grapes melon or berries

Coffee:

  • Coffee
  • Your choice of sweetener
  • Your choice of creamer

Instructions

  • In a non-stick skillet, cook the Canadian bacon over medium heat until heated through, about 2-3 minutes per side.
  • While the bacon is cooking, split and toast the English muffins. Place the canadian bacon on the bottom half of the english muffin.
  • Prepare your fresh fruit by washing and slicing as desired.
  • Brew and prepare the coffee to your liking.
  • In the same skillet used for the bacon, add the butter. Crack the eggs into the skillet and cook until the white are firm then flip over and top with cheese. Cook for 1 minute more or until the cheese is melted. Season with salt and pepper.
  • Place the eggs over the canadian bacon. Add the top half of the English muffin to complete the sandwich.
  • Serve with fruit and coffee.
