Ingredients

  • 1.5 Tomatoes diced
  • 3 tbsp Red onion finely diced
  • 4 clove Garlic minced
  • 1 tsp Red wine vinegar
  • 1 tbsp Fresh basil chopped
  • 6 tbsp Extra-virgin olive oil
  • 1/2 cup Breadcrumbs
  • 1 lb Chicken breast boneless skinless butterflied
  • 4 slices Crusty bread lightly toasted
  • 4 tbsp Balsamic glaze

Instructions

  • Mix together the tomatoes, onion, garlic, vinegar, basil, and half of the olive oil in a bowl and set aside.
  • Place breadcrumbs on a dish and press the chicken into the breadcrumbs to coat both sides well.
  • Heat a nonstick pan over medium heat with the remaining oil.
  • Add the chicken to the pan and cook on both sides till golden brown and an internal temperature of 160 degrees is achieved using a thermometer. Place on a paper towel lined plate to drain excess oil.
  • Lightly toast the bread.
  • Top with the tomato mixture, drizzle with balsamic glaze and serve.
