Ingredients

  • 1/2 lb Chicken breast boneless skinless
  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion diced
  • 2 cloves Garlic sliced
  • 3 cups Chicken broth
  • 1/2 tsp Smoked Paprika
  • 2 tbsp Tomato paste
  • 1 tbsp Miso paste
  • 1.5 cups Turnips peeled and cut into bite sized pieces
  • 3 cups Broccoli Rabe chopped, also known as Rapini
  • 3/4 cup Israeli couscous also known as pearl couscous
  • ½ tsp Red pepper flakes optional
  • Fresh parsley garnish
  • 2 slices Crusty bread toasted

Instructions

  • Preheat the oven to 375 degrees. Season the chicken on both sides with salt and pepper. Heat an oven safe saute pan on medium heat. Once hot, add half of the oil. Sear the chicken to golden brown on both sides then transfer the pan to the oven and cook to an internal temperature of 160 degrees using a thermometer. Set aside on a cutting board to rest, cut into bite sized pieces right before serving.
  • Heat a pot over medium heat. Once hot, add the remaining oil. Saute the onion and garlic until golden brown. Stir in the broth, smoked paprika, tomato paste, miso, turnips, and broccoli rabe. Bring to a simmer until the turnips are tender. Stir in the couscous and cook until tender (refer to the instructions on the package for cooking time). Season with salt and pepper to taste.
  • Portion with a slotted spoon, add a ladle of broth or more as needed (try not to overdo it with too much broth). Top with chicken. Garnish with red pepper flakes and parsley. Serve with bread.
