Broccoli Soup

Ingredients

  • 1 Tbsp Butter
  • 1 tsp Extra-virgin olive oil
  • 1/4 cup Red onion minced
  • 4 cloves Garlic minced
  • 1/2 lb Ground turkey
  • 2 tbsp All-purpose flour
  • 6 cups Chicken broth
  • 1 head Broccoli stem removed and florets chopped very small
  • 12 slices Crusty bread sliced about 1/2 inch thick
  • 1/2 cup Heavy cream
  • 1/2 cup Cheddar cheese shredded
  • 1/4 cup Scallions for garnish

Instructions

  • Heat the butter and oil in a pot over medium heat. Sauté the onions and garlic until golden brown. Crumble in the turkey and brown well breaking it up into smaller pieces until it is no longer pink. Stir in the flour and cook for 1 minute.
  • Stir the broth and broccoli. Season with salt and pepper. Cover with a lid and bring to a simmer for about 15 - 20 minutes until the flavor builds. Stirring occasionally.
  • In the meantime, toast the bread so it is nice and crunchy. Then set aside.
  • Stir the cream and cheese into the soup. Continue to simmer with the lid off so the soup gets nice and creamy. Taste and adjust the seasoning with salt if needed.
  • Top with bread crostini and scallions. Serve right away.
