Ingredients
Mac and Cheese
- 1 cup Broccoli chopped into bite-sized florets
- 4 oz Elbow macaroni or your choice of pasta
- 8 oz Andouille sausage links sliced
- 2 TBSP Lemon juice
- ¼ tsp Baking soda
- ⅙ cup Milk
- 1 cup Cheddar cheese shredded
- 1 TBSP Butter
- Salt to taste
- Black pepper to taste
Sweet Iced tea
- 24 oz Iced tea
Instructions
- Bring a pot of salted water to a boil. Blanch the broccoli until tender. Then remove with a slotted spoon and set aside. (Use boiling water to cook the pasta, too.)
- Cook the pasta according to the package instructions. Drain well.
- Heat a nonstick pan on medium heat. Once hot, saute the sausages to golden brown on the outside and cooked through.
- In a saucepan, mix lemon juice and baking soda. The mixture will bubble and react. Wait until the reaction dies down, and then taste-test. If not sour, it is ready to use. Heat over medium heat and add in the milk. Add the cheese and melt, stirring, until creamy. Add butter and salt and pepper to taste.
- Stir in the pasta until it is fully coated with the cheese sauce. Season with salt and pepper to taste before serving. Stir in the broccoli and sausage.
- Portion mac and cheese and serve with sweet iced tea.
