Ingredients
- 4 oz Deli ham
- 2 slices Sourdough bread lightly toasted
- 2 tsp Extra-virgin olive oil
- 4 Eggs
- 1 Plums sliced (Check the Fruit guide to substitute seasonal fruits)
- 2 tsp Hot sauce optional
Instructions
- Heat a nonstick pan on medium heat. Once hot, brown the ham slices on both sides then place on the toast.
- Add the oil to the pan and crack the eggs into the pan being careful not to break the yolks. Cook until the whites of the eggs start to firm up, add 1 to 2 tablespoons of water to the pan and cover with a lid. Cook until the whites are firm. Season with salt and pepper.
- Serve the eggs with ham toast and plum. Drizzle with hot sauce if desired.
