Ingredients

  • 2 TBSP Extra-virgin olive oil
  • 2 cups Potato peeled and diced
  • 3 TBSP Red onion diced
  • 1/4 cup Green bell pepper diced
  • 1/3 cup Cheddar cheese shredded
  • 4 oz Deli ham diced
  • 4 Eggs
  • 2 slices Sourdough bread toasted
  • 2 tsp Butter
  • 2 TBSP Apricot jam

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Preheat the oven broiler on low.
  • Prep ingredients per instruction above.
  • Heat oil in a non-stick pan over medium heat. Add in the potatoes, onion, and peppers. Season with salt and pepper. Saute for about 10 to 15 minutes while stirring occasionally until the potatoes are tender. Add in the ham and saute until golden brown. Top with cheese and transfer the pan underneath the broiler to melt. While broiling, cook the eggs and toast the bread.
  • Set another pan over medium heat.
  • Toast the bread in a toaster oven.
  • Drizzle the heated pan with oil. Crack in the eggs. Cook until the whites are firm. Season with salt and pepper.
  • Then spread the toasted bread with butter and jam.
  • Serve: Remove the hash from the oven and top with the fried eggs. Enjoy with toast and orange juice.
