Ingredients

  • 3 tbsp Extra-virgin olive oil
  • 1 medium Potatoes peeled and diced small
  • 6 oz Chicken sausage links diced
  • 8 Eggs beaten
  • 4 oz Cheddar cheese shredded
  • 3 tbsp Scallions chopped
  • 4 slices Sourdough bread toasted (or bread of your choice)
  • 2 cups Grapes (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Heat the oil in a non-stick pan over low-medium heat. Add in the potatoes and season with salt; sauté for 6-8 minutes or until you get a nice golden brown on all sides. Add in the chicken sausage and brown. Check to make sure the potatoes are tender. Season with salt and pepper.
  • Once the potatoes are almost done cooking, add in the eggs and cheese. Move the eggs around the pan until they become firm and fluffy but still moist. Stir in the scallions. Season with salt and pepper.
  • Toast the bread.
  • Serve with toast and grapes.
