Ingredients
- 9 oz Andouille sausage links
- 2 tbsp Butter
- 8 Eggs beaten
- 2 tbsp Scallions chopped
- 1/4 cup Mozzarella cheese shredded
- 4 slices Sourdough bread toasted and buttered if desired
- 2 Apples sliced (Check the Fruit guide to substitute seasonal fruits)
- 1/2 tsp Red pepper flakes garnish
Instructions
- For the sausage: cook in a 400°F oven to an internal temperature of 150°F using a thermometer.
- Heat a nonstick pan on medium low heat. Add the butter, eggs, scallions, and cheese into the pan, stir the eggs continuously using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Toast the bread.
- Serve with sausage, toast, and apple. Top with red pepper flakes if desired.
