Ingredients

  • 3 tbsp Extra-virgin olive oil
  • 6 oz Chicken sausage links diced
  • 8 Eggs beaten
  • 1/2 cup Tomato diced
  • 4 oz Fresh mozzarella diced into small chunks
  • 3 tbsp Scallions chopped
  • 1 Avocado pitted and diced
  • 4 slices Sourdough bread toasted (or bread of your choice)
  • 1 cup Blueberries (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Heat the oil in a non-stick pan over low-medium heat. Add in the chicken sausage and sauté for 6-8 minutes or until you get a nice golden brown on all sides and no longer pink.
  • Add in the eggs, tomatoes, and cheese. Move the eggs around the pan until they become firm and fluffy but still moist. Remove from the heat. Stir in the scallions and avocado. Season with salt and pepper.
  • Toast the bread.
  • Serve the eggs with toast and blueberries.
