Ingredients

  • 4 tbsp Mayonnaise
  • 1 tsp Garlic grated
  • 8 slices Multigrain bread or bread of your choice
  • 8 slices Tomato
  • 4 tsp Extra-virgin olive oil
  • 1/2 cup Hard Salami chopped
  • 8 Eggs beaten
  • 1/2 cup Mozzarella cheese shredded
  • 1 cup Strawberries (Check the Fruit guide to substitute seasonal fruits

Instructions

  • In a bowl whisk together the mayo and garlic. Season with salt and pepper to taste. Lightly toast the bread. Spread the mayo mixture onto both halves and lay the tomatoes on one of the slices.
  • Heat a nonstick pan over medium heat. Once hot, add half of the oil and salami. Saute for about 2 minutes.
  • Add in the eggs and cheese. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste. 
  • Portion the eggs onto the bread. Cut in half and serve with strawberries.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
