Ingredients
- 1 tsp Extra-virgin olive oil
- 4 oz Deli ham chopped
- 1 TBSP Butter
- 1/4 cup Onion diced small
- 1/4 cup Green bell pepper diced small
- 4 Eggs beaten
- 1/2 cup Cheddar cheese shredded
- 2 English muffin lightly toasted
- 1 cup Grapes
Orange Juice
- 16 oz Orange juice cold
Instructions
- Preheat the oven broiler on low.
- Prep ingredients per the instructions above.
- Heat the oil in a nonstick skillet on medium heat. Saute the ham until golden brown.
- Add the butter. Saute the onion and pepper until softened and golden brown. Pour in the eggs and reduce the heat to low. Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it. Continue going around the pan, pulling the eggs toward the center until the eggs are nearly set. Sprinkle cheese over the egg and transfer the pan under the oven broiler to melt the cheese.
- Toast the English muffin in a toaster oven. Portion the eggs onto the English muffin.
- Serve: Enjoy the sandwich with grapes and orange juice.
