Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 8 Eggs beaten
  • 1/2 cup Tomato diced
  • 4 tbsp Scallions chopped, plus more for garnish
  • 2 Flat bread
  • 3 oz Monterey jack cheese shredded
  • 6 oz Chicken sausage links chopped
  • 1 Nectarine sliced and pitted (Check the Fruit guide to substitute seasonal fruits
  • Jalapeño pepper sliced (optional)

Instructions

  • Preheat the oven broiler on low.
  • Heat the oil in a non-stick pan over medium heat. Add the eggs, tomato, and scallions to the pan and move them around with a spatula until they are firm and still moist but no longer runny and portion them on top of the flat bread. Spread the cheese over the top. Season with salt and pepper .
  • In the same pan, brown the chicken sausage, then place on the flatbread as well.
  • Place the flatbread under the broiler until the cheese has melted, about 2-3 minutes.
  • Cut the flatbread into wedges and serve with nectarines. Garnish with scallions and jalapeno (if using).
