Ingredients
- 1 tbsp Extra-virgin olive oil
- 8 Eggs beaten
- 2 Flat bread
- 3 oz Mozzarella cheese shredded
- 1/2 cup Tomato diced
- 6 oz Chicken sausage links chopped
- 2 tbsp Fresh parsley garnish
- 1 Apple sliced
Instructions
- Preheat the oven broiler on low.
- Heat the oil in a non-stick pan over medium heat. Add the eggs to the pan and move them around with a spatula until they are firm and still moist but no longer runny and portion them on top of the flat bread. Spread the cheese and tomato over the top. Season with salt and pepper .
- In the same pan, brown the chicken sausage, then place on the flatbread as well.
- Place the flatbread under the broiler until the cheese has melted, about 2-3 minutes. Garnish with parsley.
- Cut the flatbread into wedges and serve with apples.
