Ingredients
- 1/4 cup Tomato diced
- 1 tsp Red onion minced
- 1/4 tsp Garlic minced
- 1 tsp Fresh cilantro chopped
- 1/2 tsp Lime juice
- 2 tsp Extra-virgin olive oil
- 4 oz Chicken sausage links chopped
- 4 Eggs beaten
- 1/4 cup Cotija cheese crumbled
- 2 Whole wheat tortilla
- 1/4 Jalapeño pepper sliced thin (optional)
- 1 cup Grapes (Check the Fruit guide to substitute seasonal fruits)
Instructions
- Place tomato, red onion, garlic, cilantro, and lime juice in a blender and pulse until chopped well. Season with salt to taste and set aside until ready to serve.
- Heat the oil in a non-stick pan over medium heat. Brown the chicken sausage well until no longer pink and cooked through. Add the eggs and cheese into the pan. Move the eggs using quick circular motions to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
- Portion the eggs on the tortilla. Fold in the ends and roll tightly.
- In a non-stick pan over medium heat, place the burrito seam side down for until golden brown. Turn the burrito over until the top is golden brown.
- Cut in half and spoon the pica and jalapeno over top. Garnish with cilantro. Serve with grapes.
