Ingredients

Orange Juice

  • 12 Oranges refrigerated so they’re cold

Burrito

  • 1 cup Potatoes peeled and diced
  • 1 TBSP Extra-virgin olive oil
  • 4 oz Ground sausage
  • ¼ cup Onion diced small
  • ¼ cup Green bell pepper diced small
  • 2 TBSP Butter
  • 4 Eggs beaten
  • ½ cup Cheddar cheese shredded
  • Salt to taste
  • Black pepper to taste
  • 2 Tortilla wraps warmed

Instructions

  • Prep ingredients per the instructions above.
  • Juice the oranges then refrigerate until service.
  • Bring a pot of water to a boil. Cook the potatoes until tender, about 8 minutes. Then drain well.
  • Heat the oil in a non-stick pan over medium heat. sauté the sausage until it starts to become nicely browned. Add the potatoes, onion, and peppers, and sauté until the vegetables are softened and the potatoes are nicely browned.
  • Add the butter, eggs, and cheese to the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff them up and cook. Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste.
  • Warm the tortillas on both sides in a nonstick pan over medium heat and set them aside.
  • Portion the eggs on the tortilla. Fold in the ends and roll tightly.
  • Serve: Cut in half and serve with orange juice.
