Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Onion diced
  • 1/4 cup Green bell pepper seeded and diced
  • 4 oz Chicken sausage links chopped
  • 8 Eggs beaten
  • 4 Onion bagels lightly toasted (or bagel of your choice)
  • 3 oz Provolone cheese
  • 2 cups Blackberries (Check the Fall Fruit guide to substitute seasonal fruits)

Instructions

  • In a non-stick pan, heat the oil over medium heat. Add the onions, peppers and chicken sausage; sauté until the the vegetables are soft, about 3-4 minutes.
  • Add the eggs to the pan. Cook, without stirring, until egg mixture begins to set, for approximately 1 minute.
  • Lightly toast the bagel.
  • Using a heat-resistant spatula, gently lift the corner of the egg and tilt the pan to allow uncooked egg to flow underneath. Cook until set. Repeat this procedure until the remaining egg is cooked.
  • Add the cheese and fold the omelet in half. Place omelet on the bagel, cut in half and serve with blackberries.
