  • Heat the oil in a non-stick pan over medium heat. Sauté the chicken sausage until it is golden brown. Add in the spinach and wilt.
  • Add the eggs to the pan. Cook, without stirring, until the egg mixture begins to set (approximately 1 minute). Using a spatula, gently lift a corner of the egg up and tilt pan to allow any uncooked egg to flow underneath. Repeat this procedure until the remaining egg is cooked and no longer runny. Add the cheese and fold the omelet in half.
  • Lightly toast the bagels.
  • Portion the eggs on the bagel, cut in half and serve with raspberries.
