Ingredients

French Fries

  • 2 Potatoes medium. peeled and cut into ¼ inch-thick sticks (about ½ lb of potato per portion)
  • Salt to taste
  • 4 TBSP Ketchup

Chicken Fingers

  • 8 oz Chicken breast boneless skinless cut into thick strips
  • 1/4 cup All-purpose flour
  • 2 Eggs beaten
  • 1 cup Seasoned bread crumbs
  • 3 cups Canola oil

Sweet Iced Tea

  • 24 oz Sweet tea cold
  • Ice cubes for serving

Bananas Foster

  • 2 TBSP Butter
  • 1/4 cup Brown sugar
  • 1/4 cup Heavy cream
  • 2 Bananas
  • 1/4 cup Walnuts chopped
  • 1/4 cup Dark rum
  • dash Cinnamon
  • 2 cups Vanilla ice cream for serving, optional

Instructions

  • Place the potatoes into a large bowl and cover completely with cold water for 20 minutes. Drain well and pat dry.
  • Preheat an airfryer to 400°F (204°C). Cook the fries according to the directions on the air fryer. Season with salt immediately to taste.
  • Season the chicken with salt and pepper. Coat the chicken well with flour, then dip into the egg, then coat well with the breadcrumbs, pressing the breading on firmly to coat well.
  • Heat the oil in a deep fryer or pot to 350F (176C). Fry the chicken golden brown to an internal temperature of 160F (71C). Set aside on paper towels to drain excess grease and lightly season with salt.
  • For dessert: Melt the butter in a heavy skillet over medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
  • Peel the bananas and slice them. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Remove the pan from the heat, then stir in the rum (optional). Carefully return the pan to the heat. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end.
  • Serve the chicken with fries and ketchup and sweet iced tea, with ice if desired.
  • For dessert, warm up the bananas over low heat and serve over ice cream.
