Braised Short Ribs

Ingredients

  • 2 lbs Beef short ribs see instructions before purchasing (about 8oz per portion they will shrink by about half)
  • 1 tbsp Extra-virgin olive oil
  • 1/4 cup All-purpose flour
  • 1/2 cup Onion cut into large chunks
  • 3 stalks Celery cut into 2 inch pieces
  • 2 cups Whole Baby Carrots
  • 3 cloves Garlic whole
  • 1/2 cup Merlot wine
  • 4 cups Beef broth
  • 1/4 cup Tomato paste
  • 4 sprigs Fresh thyme
  • 3 sprigs Fresh rosemary
  • 4 Dinner rolls

Instructions

  • Preheat the oven to 350 degrees.
  • Short ribs should be attached to a bone and cut into squares as pictured.
  • Heat a pot on high heat. Once hot, add the oil. Season the beef on all sides with salt and pepper and lightly toss with flour until coated. Brown the ribs in the pot on all sides until nicely browned. Remove from the pot and set aside.
  • Lower the heat to medium, add the onions, celery, carrots, and garlic. Saute for about 3 minutes, then add the red wine and simmer until the wine evaporates by about half. Stir in the beef broth and tomato paste. Place the shortribs meaty side down into the liquid (the liquid should cover the short ribs 3/4 of the way, add more broth if needed). Add the thyme and rosemary, cover with a lid and bring to a simmer. Then transfer to the oven.
  • Cook in the oven for about 1.5 - 2.5 hours, or until the meat is tender and can easily be pierced and pulled apart with a fork. (The timing will depending on the size of each rib, if you have large cuts, stick closer to 2 hours).
  • Once cooked, skim any grease off the sauce using a ladle and discard so they arent greasy. Remove the thyme and rosemary stems.
  • Spoon the sauce over the short ribs, serve with braised carrots, celery, and bread. Garnish with rosemary.
