Ingredients

French Fries

  • 2 medium Potatoes
  • 4 cups Canola oil or your preferred high smoke point frying oil
  • Salt to taste
  • 4 TBSP Ketchup

Burger

  • 8 oz Black beans drained and rinsed
  • 1/3 cup Green bell pepper
  • 1/4 cup Onion
  • 2 cloves Garlic peeled
  • 1/2 TBSP Chili powder
  • 1/2 tsp Ground cumin
  • Salt to taste
  • Black pepper to taste
  • 1 large Egg beaten
  • 1/3 cup Breadcrumbs
  • 4 slices Tomato
  • 1/3 cup Red onion sliced thin
  • 2 Hamburger buns lightly toasted
  • 1/4 head Bibb lettuce

Chipotle Mayo Sauce:

  • 1/2 cup Mayonnaise
  • 2 tsp Chipotle Sauce
  • 1 tsp Lime juice
  • Salt to taste
  • Black pepper to taste

Sparkling Water

  • 24 oz Sparkling water cold

Instructions

  • Cut the potatoes into 1/4-inch thick sticks. Place into a large bowl and cover completely with cold water for 20 minutes. While the potatoes are soaking, prep burger ingredients.
  • Mash black beans: Place rinsed and drained black beans in a bowl. If needed, blot them with a paper towel to remove extra moisture. Place in a large bowl and mash well with a fork.
  • Puree Veggies: Place bell pepper, onion and garlic in a food processor and process until finely minced.
  • Strain: Transfer pureed veggies to a fine mesh strainer and use the back of a spoon to press out excess moisture. (If it's too wet, the burger won’t hold together as well.)
  • Combine: Add the strained vegetable mixture to the bowl with the black beans. Add the chili powder, cumin, salt and pepper and stir to combine. Add beaten egg and mix. Stir in bread crumbs.
  • Form Patties: Scoop mixture into even sized patties, forming them and pressing flat with your hands.
  • Make Chipotle Mayo Sauce: Add all the ingredients to a food processor or blender and puree until smooth. Season with salt and pepper to taste.
  • Prep tomato and onion per instruction above.
  • Drain the potatoes well and pat dry with a towel.
  • Blanch the fries.
  • If using oven, heat the oven to 350°F (180°C). Place fries on a parchment lined baking sheet. Cook in the oven until tender, about 15 to 20 minutes.
  • If using oil: Heat the oil to 300°F (150°C) in a dutch oven or deep fryer. Fry fries in small batches until softened, about 6 to 10 minutes.
  • Once the fries are soft, set them aside to cool completely.
  • Fry the fries: Heat the oil to 375°F (190°C) in a dutch oven or deep fryer (or increase the heat if you blanched the fries in oil). Add the cooled fries to the oil in small batches and cook until crispy and golden brown (overcrowding the oil will result in limp fries). Remove to a paper towel-lined large bowl and season with salt immediately to taste.
  • Cook the patty.
  • For the Grill: Cook on a well-oiled grill over medium heat, for 4-5 minutes on each side.
  • For the Stovetop: Cook over medium heat in a greased grill pan or skillet for 4-5 minutes on each side.
  • Assemble burger.
  • Layer the bun with lettuce, black bean burger, sauce, tomato, and onion.
  • Serve: Enjoy burger with french fries, ketchup, and sparkling water.
