Ingredients
Rice
- 1/4 cup White rice rinsed
Chips and Pico
- 1 cup Tomato diced small
- 2 TBSP Red onion minced
- 1 clove Garlic minced
- 1 tsp Lime juice
- 1/2 TBSP Extra-virgin olive oil
- 1 TBSP Fresh cilantro chopped
- 2 oz Tortilla Chips
Seasoning
- Salt to taste
- Black pepper to taste
Burrito
- 8 oz Ground beef
- 1/2 TBSP Taco seasoning or more if needed
- 1/2 cup Black beans drained and rinsed
- 1/2 cup Cheddar cheese shredded
- 2 Tortilla wraps
Sparkling Water
- 24 oz Sparkling water cold
- 1 Lemon sliced
Instructions
- Prep all ingredients per the instructions above.
- Cook the rice according to the instructions on the package. Once tender, season with salt and pepper to taste. Cover with a lid to keep warm.
- Make the pico: Place all ingredients (except the tortilla chips) into a bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Heat a large non-stick skillet over medium heat. Once hot, add the ground beef and taco seasoning, breaking up the beef with a wooden spoon. Cook until no longer pink. Mix in the black beans, rice, and cheese. Season with salt to taste.
- Portion the meat onto the tortilla wrap, fold in the ends, and roll up tight.
- Mix the sparkling water and lemon.
- Serve the burrito with pico, chips and lemon sparkling water.
