Ingredients
Banh Mi
- 1 loaf French baguette cut into 6 inch pieces per portion
- 1 Carrot peeled and cut into fine matchsticks
- 1 Daikon radish peeled and cut into fine matchsticks
- 2 tsp Salt
- 1 TBSP Sugar
- ¼ cup Rice wine vinegar
- ¼ cup Water
- ¼ cup Mayonnaise
- 4 oz Deli roast beef
- 4 oz Deli ham
- 2 Chili peppers thinly sliced
- 1 Cucumber thinly sliced
- 1 cup Fresh cilantro
- 2 oz BBQ Potato chips
Homemade Lemonade
- 1 cup Lemon juice fresh squeezed
- 16 oz Water
- 2 TBSP Sugar use to taste
- Ice cubes
Instructions
- Prep the ingredients per instructions above.
- Preheat the oven to 350°F (175°C).
- Cut the French baguette into two equal portions and then slice each portion lengthwise.
- Pickled Carrots and Daikon: Combine carrots, daikon, salt, and sugar in a small bowl and toss to coat. Allow to rest for 10 minutes until the liquid has been drawn out of the vegetables and the salt and sugar are completely dissolved. Add vinegar and water and transfer to a small, sealable container. Let sit at room temperature for 1 hour.
- Place the baguette slices on a baking sheet and toast in the preheated oven for about 5 minutes or until golden.
- Once toasted, spread half of the mayonnaise evenly on the baguette. Spread half of the liver pate on the inner sides of each baguette.
- On one side of the baguette, layer sliced ham and roast beef evenly. Add a generous amount of pickled carrots and daikon on top.
- Place cucumber slices on the other side of the baguette. Sprinkle sliced chili peppers over the cucumber. Place cilantro sprigs on top.
- Press the two sides of the baguette together, creating a sandwich.
- Mix together the ingredients for the lemonade.
- Serve immediately and enjoy your delicious meat and cold cuts banh mi with chips and homemade lemonade.
