Ingredients
- 12 oz Sirloin steaks substitute deli roast beef if desired
- 2 tbsp Steak seasoning montreal steak seasoning or comparable brand
- 6 cups Spring mix
- 12 Grape tomatoes halved
- 2 cups Corn
- 1 cup Chickpeas
- 1/2 cup Carrots shaved or shredded
- 1/2 cup Red onion sliced very thin or shaved
- 4 tbsp Crumbled blue cheese or more if desired
- 4 Dinner rolls (or your preference of bread)
Dressing
- 2 tbsp Extra-virgin olive oil
- 3 cloves Garlic minced
- 1 tbsp Balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp Honey or more if needed
Instructions
- Preheat a skillet or non-stick pan over medium heat.
- Season both sides of the sirloin well with steak seasoning and salt. Cook the steak on both sides to your desired temperature using a thermometer (see below). Once cooked, set aside to rest for 3-5 minutes before slicing thin against the grain.
- Heat a nonstick pan over medium heat. Cook the corn until it develops a golden brown color.
- Lay down the spring mix, top with tomatoes, corn, chickpeas, carrots, onion, sliced steak, and blue cheese.
- Whisk all of the ingredients for the dressing in a bowl.
- Drizzle the dressing over top of the salad (about 2 teaspoons of dressing per portion) and serve with bread.

Steak Internal Temperatures:
- Rare: 115 - 120 degrees F
- Medium Rare: 125 - 130 degrees F
- Medium: 135 - 140 degrees F
- Medium Well: 145 - 150 degrees F
- Well Done: 160 degrees F
