Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 cloves Garlic minced
  • 28 oz Canned diced tomato
  • 3 tbsp Fresh basil whole leaves
  • 1 lb Chicken breast boneless skinless cut into bite sized chunks
  • 8 oz Penne pasta or pasta of your choice
  • 4 oz Mozzarella cheese shredded
  • 4 slices Crusty bread

Instructions

  • Preheat the oven to 350 degrees.
  • Heat the oil in a pot on medium heat. Saute the garlic for 1 - 2 minutes until golden brown. Add in the canned diced tomatoes. Season generously with salt and a pinch of pepper. Partially cover with a lid and bring to a simmer. Let simmer for 20 minutes, stirring occasionally. Using an immersion blender or stand up blender, add in the basil and blend the sauce until it is smooth. Place back on the stove, add in the chicken and simmer for another 8 minutes.
  • In a pot of boiling salted water cook the pasta according to the directions on the package. Drain well.
  • In a baking dish mix together the pasta, half of the sauce, and chicken. Top with mozzarella and bake in the oven until the cheese is melted about 5 - 10 minutes.
  • Portion and serve with crusty bread.
