Ingredients
- 1 tbsp Extra-virgin olive oil
- 2 cloves Garlic minced
- 28 oz Canned diced tomato
- 3/4 lb Italian sausage link
- 8 oz Penne pasta or pasta of your choice
- 3 tbsp Fresh basil whole leaves
- 4 tbsp Ricotta cheese
- 4 oz Mozzarella cheese shredded
- 4 slices Crusty bread
Instructions
- Preheat the oven to 350 degrees.
- Heat the oil in a pot on medium heat. Saute the garlic for 1 - 2 minutes until golden brown. Add in the canned diced tomatoes. Season generously with salt and a pinch of pepper. Partially cover with a lid and bring to a simmer. Let simmer for 30 minutes, stirring occasionally.
- Place the sausage on a foil lined baking sheet and cook for about 8 minutes per side, turning the sausage halfway through. Set aside for 5 minutes to cool then dice.
- In a pot of boiling salted water cook the pasta according to the directions on the package. Drain well.
- Taste the sauce, if it is too acidic, let it simmer for 5 - 10 more minutes. Adjust the seasoning with salt and pepper. Once the sauce is done remove it from the heat, using an immersion blender or stand up blender, add in the basil and blend the sauce until it is smooth. Season with salt and pepper if needed.
- In a baking dish mix together the pasta, half of the sauce, ricotta cheese, and sausage. Top with mozzarella and bake in the oven until the cheese is melted about 5 - 10 minutes.
- Portion and serve with crusty bread.
