Baked Feta Pasta

Ingredients

  • 1 Pint Grape tomatoes
  • 8 oz Feta cheese preferably not stored in a liquid brine
  • 2 tsp Garlic minced
  • 3/4 lb Chicken breast boneless skinless diced into bite sized pieces
  • 2 tbsp Extra-virgin olive oil
  • 8 oz Fettuccine pasta or pasta of your choice
  • 2 tbsp Fresh basil chopped
  • 4 slices Crusty bread toasted

Instructions

  • Preheat the oven to 400°F.
  • Add tomatoes, feta, garlic, and chicken to a casserole dish. Drizzle olive oil over the top and season with salt and pepper. Place in the oven for about 30 minutes.
  • In the meantime, in a pot of salted boiling water, cook the pasta according to the directions on the package. Drain well then set aside.
  • Take the casserole dish out of the oven and immediately start to mash the cherry tomatoes and cheese together using a whisk. Stir in the pasta until everything is incorporated. Taste and season with salt if needed.
  • Stir in the basil, serve immediately with bread.
