Bagel Toast

Ingredients

  • 4 tsp Extra-virgin olive oil substitute excess bacon grease if desired
  • 8 slices Tomato sliced 1/4 inch thick
  • 6 oz Kielbasa
  • 2 Everything bagel toasted (or bagel of your choice)
  • 2 tbsp Butter
  • 8 Eggs beaten
  • 2 tsp Scallions chopped
  • 2 Kiwi peeled and sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • For the sausage: cook in a 400°F oven to so the outside gets nicely browned and crisp. (most kielbasa is smoked however if it is raw cook to an internal temperature of 155 degrees using a thermometer). 
  • Lightly toast the bagel, top with tomato slices, lightly season with salt and pepper.
  • Heat a nonstick pan over medium low heat. Add the butter and eggs. Stir the eggs continuously using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat before the eggs become dry, while they are still moist.  Season with salt and pepper to taste. Serve immediately.  
  • Place the eggs on the bagel. Garnish with scallions. Serve with kielbasa and kiwi.
