Ingredients

Bacon Brunch Ring:

  • 4 slices Bacon chopped
  • ½ cup Deli ham diced
  • ¼ cup Bell pepper finely chopped (any color)
  • ¼ cup Onion finely chopped
  • 1 Puff pastry sheet, thawed
  • 4 Eggs large
  • Salt to taste
  • Black pepper to taste
  • ½ cup Cheddar cheese shredded

Fresh Fruit:

  • 2 cups Your choice of fruit (such as berries, orange slices, or grapes)

Grape Juice:

  • 16 oz Grape juice

Instructions

  • Preheat your oven to 375°F (190°C).
  • Chop the bacon, ham, bell pepper, and onion. Thaw the puff pastry sheet according to package instructions.
  • In a bowl, whisk the eggs and season with salt and pepper.
  • In a skillet over medium heat, cook the chopped bacon until crispy. Remove excess grease if needed. Add chopped bell pepper and onion to the skillet. Cook until the vegetables are tender. Add egg mixture to vegetable mixture and stir while cooking until eggs are set but not dry. Remove from heat and set aside.
  • Roll out the puff pastry sheet on a lightly floured surface. Cut it into quarters.
  • Arrange the bacon-vegetable-egg mixture and diced ham evenly over each puff pastry quarter. Sprinkle shredded cheese on top.
  • Fold the puff pastry quarters over the filling, forming a ring shape. Press the edges to seal.
  • Transfer the assembled brunch ring onto a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20-25 minutes or until the puff pastry is golden brown and puffed up.
  • While the brunch ring is baking, wash and prepare the fresh fruit. Arrange it on serving plates.
  • Pour grape juice into glasses.
  • Once the brunch ring is out of the oven and has cooled slightly, carefully transfer it to a serving platter.
  • Serve slices of the brunch ring with fresh fruit on the side and a glass of grape juice.
