Ingredients
- 8 slices Bacon
- 4 tsp Extra-virgin olive oil
- 8 Eggs
- 4 oz Cheddar cheese sliced
- 8 Sourdough bread lightly toasted (or your choice of bread)
- 2 Avocados pitted and sliced
- 1 cup Strawberries sliced
- 1 cup Blueberries
Instructions
- In a nonstick pan on medium low heat cook the bacon on both sides until it is crisp.
- Heat the oil in a nonstick pan on medium heat. Crack the eggs into the pan, season with salt and pepper. Cook until top is nearly set but still glossy, then flip the eggs over, add the sliced cheese and melt.
- Lightly toast the bread. Layer with bacon, avocado, and eggs, cut in half and serve with strawberries and blueberries.
