Ingredients
- 4 slices Bacon
- 4 Eggs beaten
- 1/4 cup White cheddar cheese shredded
- 2 slices Sourdough bread toasted (or bread of your choice)
- 2 tsp Butter optional
- 1 Plums sliced (Check the Fruit guide to substitute seasonal fruits)
- 1 tbsp Scallions garnish
Instructions
- Add the bacon to a non-stick pan over medium heat. Cook on both sides until it becomes browned and crispy. Set aside on paper towels to drain excess grease.
- Add the eggs and cheese into the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with pepper. Taste and add salt if needed.
- Lightly toast the bread. Butter it if desired.
- Serve the eggs with bacon, toast, and plum. Garnish with scallions.
