Apple Cheesecake Bars

Ingredients

  • 1 cup All-purpose flour
  • 1/4 cup Brown sugar
  • 6 tbsp Butter cut into cubes
  • Nonstick spray
  • 8 oz Cream cheese softened (the brick, not the tub style)
  • 1/4 cup Sugar
  • 1/2 tsp Vanilla extract
  • 1 Egg
  • 2 Granny Smith apple peeled and diced into 1/4" pieces
  • 1/2 tsp Ground cinnamon
  • 1/8 tsp Ground nutmeg
  • 1 tbsp Sugar

Crumb Topping:

  • 6 tbsp All-purpose flour
  • 6 tbsp Brown sugar
  • 1/4 cup Quick oats
  • 2.5 tbsp Butter melted

Instructions

  • Preheat oven to 350 degrees F.
  • In a food processor pulse the flour, brown sugar, and cut up cold butter until a crumb type mixture forms. Lightly grease an appropriately sized baking dish with nonstick spray. Press the mixture into the bottom of the baking dish evenly. Bake for 10 minutes and remove from oven.
  • Using an electric mixer or whisking by hand, beat the cream cheese until it is light and fluffy. Add in the sugar (cup) and vanilla and beat until smooth. Add eggs and mix until just combined. Spread the mixture over the crust.
  • In a bowl combine chopped apples, cinnamon, nutmeg, and, sugar (tbsp). Stir to combine. Sprinkle apple mixture over cream cheese mixture.
  • In a bowl mix the flour, brown sugar, oats and melted butter until it forms a crumble. Sprinkle this topping over the apples.
  • Bake for 25-30 minutes or until the filling is set. Remove from the oven. Allow them to cool for a few minutes then transfer to the refrigerator or freezer to cool fully. When serving top with a drizzle of caramel sauce if desired.
