Ingredients

Mini Apple Pies

  • 2 Pie crusts mini sized if possible (store-bought)
  • 2 cups Apples peeled cored and sliced (such as Granny Smith or Honeycrisp)
  • ¼ cup Granulated sugar
  • ½ tsp Ground cinnamon
  • ¼ tsp Ground nutmeg
  • 1 TBSP All-purpose flour
  • 1 TBSP Unsalted butter cut into small pieces
  • 2 Vanilla ice cream scoops, (optional for serving)

Beef and Noodles

  • 2 TBSP Vegetable oil divided
  • 8 oz Sirloin steak cut into 2" cubes
  • 1 TBSP All-purpose flour
  • 2 tsp Salt divided
  • ¼ tsp Black pepper plus more
  • 1/2 cup Yellow onion finely chopped
  • 4 cups Beef broth divided
  • 6 oz Egg noodles

House Salad

  • 4 cups Spring mix
  • ½ cup Grape tomatoes halved
  • ¼ cup Cucumber sliced
  • ¼ cup Red onion thinly sliced
  • Your favorite salad dressing

Milk

  • 24 oz Milk cold

Instructions

For Mini Apple Pies:

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the sliced apples, granulated sugar, ground cinnamon, ground nutmeg, and all-purpose flour. Toss to coat the apples evenly.
  • Divide the apple mixture equally between the mini pie crusts. Place the top layer of crust over the filling.
  • Place the pies on a baking sheet and bake in the preheated oven for about 25-30 minutes, or until the pie crusts are golden brown, and the filling is bubbling.
  • Remove the mini apple pies from the oven and let them cool before serving.
  • If desired, serve each mini apple pie with a scoop of vanilla ice cream on top.

For the Beef and Noodles:

  • In a large pot over medium-high heat, heat half the oil. Place the beef cubes in a large bowl and toss with flour, half the salt, and pepper.
  • Add to the pot and cook, turning occasionally, until browned on 2 sides, about 4 to 5 minutes. Transfer the browned beef to a plate.
  • Reduce the heat to medium. Cook the chopped onion, stirring occasionally, until just tender, about 5 to 7 minutes. Return the browned beef to the pot and add ¾ of the beef broth. Bring the mixture to a boil over medium-high heat. Then, reduce the heat to medium-low, cover the pot, and simmer until the beef is tender enough to shred with a fork, about 2 to 2 ½ hours.
  • Transfer the cooked beef to a large plate and shred it with two forks into bite-size pieces.
  • Pour the remaining beef broth into the same pot and bring it to a boil. Add the egg noodles and cook, stirring occasionally, until they are tender, about 7 to 8 minutes. Return the shredded beef to the pot, toss to combine, and season with the remaining salt as needed.
  • Divide the beef and noodles mixture evenly among two bowls. Serve topped with lots of freshly ground black pepper.

For the House Salad:

  • In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion.
  • Drizzle your favorite salad dressing over the salad and toss to coat.
  • Serve the Amish beef with salad, milk, and apple pie with or without a scoop of vanilla ice cream.
