Ingredients

  • 4 slices Sourdough bread lightly toasted (or bread of your choice)
  • 2 cups Baby spinach cut the leaves to fit the bread
  • 4 oz Deli ham sliced thin
  • 1/2 cup Artichoke hearts sliced thin
  • 4 slices Tomato
  • 1/4 cup Asiago cheese shaved
  • 4 Pickle spears

Dressing

  • 3 tsp Extra-virgin olive oil
  • 1 tsp Apple cider vinegar
  • 1/2 tsp Dijon mustard
  • 1/4 tsp Dried oregano
  • Leftover Red lentil soup about 1 cup per portion

Instructions

  • In a bowl whisk together all the ingredients for the dressing. Season with salt and pepper. Set aside.
  • Lightly toast the bread.
  • Layer with spinach, ham, artichoke, tomato and season with salt and pepper, and cheese. Drizzle with dressing. Cut in half and serve with pickles and soup.

Notes

Make a full sandwich if desired
